Everyone looks forward to their favorite appetizers on Superbowl Sunday. Try this recipe for Mango Habanero Wings; it’s a great twist on the tradition buffalo wings!
What you will need:
3 tablespoons peanut oil
6 mangoes (coarsely chopped)
2 spanish onions (finely chopped)
3 habanero chiles (minced)
6 garlic cloves (finely chopped)
3 cups apple cider vinegar
3/4 cup packed light brown sugar
2 tablespoons grated fresh ginger
1 pound chicken wings
salt and freshly ground black pepper
2 lemons, juiced
canola oil (for frying)
Start off by making the Mango-Habanero Sauce:
In a medium saucepan, heat peanut oil over medium-high heat. Add mangoes, onions, chiles, and garlic; cook down until onion is softened. Reduce heat to medium and stir in vinegar, brown sugar, and ginger. Add salt to taste. Reduce heat to low and cook for 30 minutes.
Remove from heat and add sauce to blender or food processor. Pulse for a few minutes until sauce has thinned out.
Meanwhile, cook wings: Rinse and pat dry wings. Season with salt and black pepper to taste. Add lemon juice, cover and marinate for 30 minutes.
In deep fryer or large skillet, heat oil and cook chicken until gold brown all over and somewhat crispy, about 10 minutes. Drain on a paper towel-lined plate then transfer to a large glass dish or large bowl. Pour mango-habanero sauce over chicken, cover all pieces, and enjoy!
